Summertime Salsa

Summer is a time for dips in the pool, refreshing drinks, and barbecues, among other things. Now whether you are joined by friends, family or simply enjoying the day by yourself, a fresh salsa is never a bad idea! It is a dish that can be eaten as a snack or appetizer served with chips or paired with an entrée like fish or meat,  either way it is sure to be a crowd pleaser. 

Today I'm sharing an easy recipe for a bright pineapple salsa, packed with flavor, that I've used to top both shrimp and Mahi Mahi fish tacos. On top of being deliciously fresh, it is also vegan, gluten free and quick to make. 

What You Need:

  •  2 Tomatoes
  • 1/2 Red Onion
  • 1 Bell Pepper (preferably yellow or orange because they are sweeter)
  • Fresh Pineapple
  • 1 Lime or to taste
  • 1/2 cup Cilantro
  • Salt, Pepper

 

How To:

  1. Cut and use half of pineapple. If you're serving a larger crowd you can use the whole pineapple. For an added bonus or simply for pure aesthetics you can use half of pineapple as a bowl for the salsa. 
  2. Finely chop tomatoes, onion, and cilantro to mix in with the pineapple. 
  3. Add in the lime and season with salt and pepper to taste. 
  4. Serve in bowl or pineapple made bowl.
